Tahini

Tahini is a paste made out of ground sesame seeds.

It is often used in hummus, baba ganoush and other Mediterranean and middle Eastern dishes. It is particularly prevalent as a condiment in Arab restaurants mixed with lemon juice, garlic and water.

In Greek and Cypriot restaurants you will often receive plain tahini as part of a meze dish. You should then eat it spread on pitta bread as the taste can be quite harsh on its own.

You can buy hulled or unhulled tahini; the former is a smoother, less bitter version but the latter is healthier as many of the vitamins and protein of sesame are contained in the hull.
