Salt in our A-Z - Cooking Index
Salt is one of the basic food flavorings and, with a couple of honorable exceptions, is used in all culinary cultures around the globe.
Salt consists primarily of sodium chloride and is one of the few minerals that man eats on a regular basis. It is usually obtained from sea water.
Salt helps the body regulate its fluid balance. Over consumption of salt can lead to high blood pressure and other health problems.
Salt is used as a preservative (eg bacalla - salted cod) and a seasoning. Until the 20th century and refrigeration it was the main preservative worldwide and was vital for nation's trading status. A nation with salt was by definition a wealthy nation. The word 'salary' comes from the Roman 'salarium' which means to be paid in salt.
