Vanilla sugar is sugar flavoured with vanilla and is used extensively in baking, especially in Germany.
To make your own vanilla sugar (far superior to the shop bought versions). buy a vanilla pod and split it along one side with a sharp knife. Add to one kilo of sugar and keep in a airproof box in a dark place. Use as necessary in dishes. It is particularly good on top of roast peaches with vanilla sugar and Amaretto, served with a vanilla ice cream.
