Pineapple Sundaes Recipe - Cooking Index
Layers of pineapple spiked with ginger complement creamy yogurt.
Courses: Dessert1 1/2 cups | 355ml | Pineapple chunks - canned or fresh |
1 1/2 cups | 355ml | Mandarin oranges packed in own juice - drained |
2 tablespoons | 30ml | Minced crystallized ginger |
3 cups | 711ml | Plain nonfat yogurt |
2 teaspoons | 10ml | Vanilla |
2 teaspoons | 10ml | Sugar |
Minced crystallized ginger - for garnish |
Combine the pineapple, oranges, and ginger and mix well. Combine the yogurt, vanilla, and sugar.
In parfait glasses, layer the fruit and yogurt, ending with yogurt. Sprinkle with a little ginger to serve.
This recipe yields 6 servings. Serving size: 1/2 cup fruit with 1/2 cup yogurt.
