Pineapple Sundaes

Layers of pineapple spiked with ginger complement creamy yogurt.

Recipe Ingredients

1 1/2 cups 355mlPineapple chunks - canned or fresh
1 1/2 cups 355mlMandarin oranges packed in own juice - drained
2 tablespoons 30mlMinced crystallized ginger
3 cups 711mlPlain nonfat yogurt
2 teaspoons 10mlVanilla
2 teaspoons 10mlSugar
  Minced crystallized ginger - for garnish

Recipe Instructions

Combine the pineapple, oranges, and ginger and mix well. Combine the yogurt, vanilla, and sugar.

In parfait glasses, layer the fruit and yogurt, ending with yogurt. Sprinkle with a little ginger to serve.

This recipe yields 6 servings. Serving size: 1/2 cup fruit with 1/2 cup yogurt.
