Borscht is a beetroot (American: beet) soup that originates from eastern Europe and in particular Russia and the Ukraine. Borscht can be served both hot and cold.
The hot borscht is often more like a stew than a soup and often has a large quantity of vegetables and meats in the soup.
Cold Borscht is generally much lighter and usually has diced or slight beetroot, it is often served with a boiled potato and is usually very sweet.
