Hoki is white fish, mostly found off New Zealand and southern Australia.
It has a delicate, bright white flesh and the added advantage of having few bones. The average fish is two to three feet long and can be as big as five foot.
Hoki is widely used in commercial fish products, mainly because it moulds and flakes very easily. It is the usual ingredient of McDonald's Filet 'o' Fish.
