Manestra (Meat With Orzo) Recipe - Cooking Index
1 tablespoon | 15ml | Oil |
1 lb | 454g / 16oz | Beef or lamb stew meat |
2 | Onions - chopped | |
1 cup | 237ml | Tomato sauce - -=or=- |
1 tablespoon | 15ml | - tomato paste instead |
1 teaspoon | 5ml | Salt |
1/8 teaspoon | 0.6ml | Pepper |
1/8 teaspoon | 0.6ml | Cinnamon |
1 teaspoon | 5ml | Spearmint flakes |
4 cups | 948ml | Boiling water |
1 cup | 237ml | Manestra - (orzo) |
1 cup | 146g / 5.1oz | Grated cheese - (mizithra!) |
Heat oil in large saucepan and brown meat and onions for 10 minutes over medium heat. Add tomato, seasonings, and 2 cups water. Cover and simmer for 1 1/2 hours until meat is tender.
Add remaining water and bring to a boil. Add manestra. Stir once or twice. Simmer 20 minutes more. Serve hot with grated cheese.
