Kolio Fourno (Baked Mackerel)

Recipe Ingredients

3 lbs 1362g / 48ozMackerel
  Salt and pepper to taste
1   Lemon
4 teaspoons 20mlGarlic - chopped
4 teaspoons 20mlOnion - chopped
2 tablespoons 30mlParsley - chopped
2 teaspoons 10mlGreen pepper - chopped
1 cup 237mlOil
1 lb 454g / 16ozTomatoes - peeled, strained
1/2 cup 118mlWhite wine

Recipe Instructions

Clean and wash fish; season with salt and pepper. Place in pan.

Squeeze lemon over fish, then refrigerate for 30 minutes Sprinkle garlic over fish, then onion, parsley, and green pepper.

Pour oil over all, then add tomatoes.

Bake in preheated 250F. oven for 15 minutes Add wine. Baste fish with pan sauce, and bake 30 minutes longer, until most of the liquid is absorbed.
