The term Florentine describes any dish that has spinach as one of its key ingredients. The term is widely used in Italian (hence the name, after the city of Florence) and French cuisine.
A Florentine is also a type of biscuit with a chocolate base and a mix of honey, nuts and dried fruit on top. Delicious though they undoubtedly are it is always curious to try and work out how they can be so heniously expensive.
