Mom's Sunday Roast

Recipe Ingredients

4 lbs 1816g / 64ozRound beef (cut 2 to 3 in. Thick)
1 cup 62g / 2.2ozFlour
1   T. Salt
1/2 teaspoon 2.5mlPepper
2   Medium onions, quartered
1 cup 62g / 2.2ozTomatoes
4   Potato quartered
4   Carrots quartered
1/2 cup 99g / 3.5ozShortening

Recipe Instructions

Salt and pepper roast on both sides. Mix remainder of salt and pepper with flour. Dredge roast on both sides in flour mixture. Melt shortening in roaster or iron skillet. Sear roast to a medium brown on both sides to hold juices. Turn heat down. Add water. Add onions and cook one hour. Add tomatoes, potatoes and carrots and simmer 1 hour covered. Serves 12.
