Creamy Chicken with Asparagus Recipe - Cooking Index

12 | Asparagus spears peeled and - cut into 1' slices | |
1/2 | Onion - chopped or 1 shallot - chopped | |
3 tablespoons | 45ml | Butter |
1 tablespoon | 15ml | Mustard |
1 cup | 237ml | Fresh cream |
1 teaspoon | 5ml | Grated lemon rind |
2 tablespoons | 30ml | Lemon juice |
1/2 cup | 118ml | Chicken stock |

1/2 cup | 118ml | Dry white wine |
Season breast with salt and pepper. Set aside 30 minutes. Cut chicken into 1 1/12" strips. butter in a pan and cook chicken until almost brown. Add onion or shallot and cook until soft. Add wine. Cook 2 minutes. Add broth, stir in mustard and add asparagus. Cook 2 to 3 minutes. Stir in lemon rind, lemon juice and salt and pepper.Cook 1 minute. Stir in cream and cook to reduce to 3/4. Pour over pasta.
