Chicken Cacciatore Recipe - Cooking Index
1 | Cut up chicken or 4 chicken breast halves | |
3 | TBS oil (can be reduced if you're fat watching) | |
1/2 cup | 31g / 1.1oz | Chopped onion |
1/2 cup | 73g / 2.6oz | Chopped green pepper |
2 | Oz) cans tomato sauce | |
1/2 cup | 118ml | Red wine (I use Chianti) |
1 teaspoon | 5ml | Salt |
1/2 teaspoon | 2.5ml | Pepper |
2 | Bay leaves | |
1/2 teaspoon | 2.5ml | Thyme |

Saute chicken in oil until golden. Add onion and green pepper. Saute until veggies are soft, but not browned. Add remaining ingredients. Simmer uncovered for 1 to 1.5 hours. Remove bay leaves before serving.
