1 | Red onion - diced (large) | |
4 | Celery - sliced | |
1/4 cup | 36g / 1.3oz | Red pepper - diced |
1 | Z can crushed tomatoes - ¥ | |
2 | Red beans | |
1/2 teaspoon | 2.5ml | Cajun spice mix - (McDougall) |
1/2 teaspoon | 2.5ml | Cilantro |
3/4 teaspoon | 3.8ml | Chili powder |
2 teaspoons | 10ml | Salt |
Grease non-stick stew pot with 2 tsp olive oil. Saute onions, celery and red peppers.
Add crushed tomatoes. Add spices.
Simmer for 15 minutes.
Add RINSED kidney beans. Heat through.
Spoon over brown rice.
