1 tablespoon | 15ml | Water |
2 teaspoons | 10ml | Minced chives |
1/4 cup | 15g / 0.5oz | Flour |
1 cup | 146g / 5.1oz | Soft bread crumbs |
Lemon wedges - (optional) | ||
2 tablespoons | 30ml | Dijon style mustard |

Roast beef or pork roast. | ||
Cooking oil |
Cut meat slices 1/4" thick. Beat egg, mustard, water and chives together.
Dredge meat slices in flour, dip in egg mixture, coat with crumbs.
Fry meat slices in 1/4" hot cooking oil in skillet until golden on both sides, turning once.
Add more oil, if needed. Serve with lemon wedges.
