Braised Alberta Pork Tenderloin

Recipe Ingredients

6 oz 170gLean Alberta pork tenderloin
1/2 cup 31g / 1.1ozChopped onion
1/4 cup 15g / 0.5ozChopped green onion
1/4 cup 36g / 1.3ozChopped green bell pepper
2 tablespoons 30mlChopped celery
2   Garlic - minced
1 teaspoon 5mlMinced fresh parsley
1/4 teaspoon 1.3mlThyme
1/4 teaspoon 1.3mlFreshly ground black pepper

Recipe Instructions

Preheat the oven to 375F. Lay the pork in a small baking pan. Combine all the vegetables and seasonings and spoon them on and around the meat in the pan.

Cover Bake for 45 minutes. Slice the tenderloin and serve it with the cooking vegetables as garnish.

NOTE: This is an unusually light way to use lean pork.

VARIATIONS: Pork is also delicious baked with a chopped apple, an onion, and 2 cloves of garlic.
