Swedish Cabbage Rolls

Recipe Ingredients

1   Cabbage - about 3 pounds
1 cup 160g / 5.6ozCooked rice
1 lb 454g / 16ozGround beef
1/2 teaspoon 2.5mlNutmeg
1 teaspoon 5mlOnion - grated (small)
2/3 cup 157mlMilk
1/4 cup 49g / 1.7ozButter
1 tablespoon 15mlFlour
1 cup 237mlLight cream

Recipe Instructions

Boil the cabbage, reserving the liquid and setting aside 12 outer leaves. Lightly mix 1 teaspoon salt and the rice, beef, nutmeg, onion and milk. Divide this filling among the leaves.

Make packages, folding in the sides, and saute them in the butter until well browned on both sides, beginning with seam side down. Pour 1 cup cabbage liquid over the top, cover and simmer for about 1 hour.

Add more liquid if necessary. Remove the rolls to a hot serving dish. Blend together the flour and cream and stir this into the pan juices.

Bring to a boil, stirring, and simmer for 2-3 minutes. Season with salt and pepper and pour over the cabbage rolls.
