| 1 lb | 454g / 16oz | Dried pinto beans |
| 6 cups | 1422ml | Cold water |
| 1/2 lb | 227g / 8oz | Salt pork - cut up |
| 1 lb | 454g / 16oz | Lean chuck steak - cut into |
| 1 | Cubes | |
| 1 | Red chili peppers -or- | |
| 1/2 teaspoon | 2.5ml | Crushed red pepper |
| 1 teaspoon | 5ml | Onions - chopped (medium) |
| 2 | Garlic - minced | |
| 6 oz | 170g | Tomato paste |
| 1 1/2 tablespoons | 22ml | Chili powder |
| 1 teaspoon | 5ml | Salt |
| 1 teaspoon | 5ml | Cumin seed |
| 1/2 teaspoon | 2.5ml | Marjoram |
Soak beans in water overnight. Brown salt pork in skillet or slow-cooking pot with browning unit.
In slow-cooking pot, combine soaked beans (with water), browned pork, and remaining ingredients.
Cover and cook on low for 9 to 10 hours.
