1/4 cup | 36g / 1.3oz | Bread crumbs - soft |
1/2 cup | 118ml | Tomato juice |
2 tablespoons | 30ml | Parsley |
1/2 teaspoon | 2.5ml | Oregano - crushed dried |
1/4 teaspoon | 1.3ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
1 teaspoon | 5ml | Garlic clove - minced (medium) |
Combine eggs, crumbs (1/4c=1 slice approx), juice, parsley, oregano, salt, pepper and garlic. Add beef and mix well. On waxed paper or foil, pat meat into a 12 in by 10 in rectangle.
Arrange ham slices atop meat leaving a small margin around the edges. Sprinkle shredded cheese over the ham. Starting from narrow end of the rectangle, roll up the meat using the paper (or foil) to lift. Seal edges and ends.
Place roll seam side down on a 13 x 9 x 2 in baking pan.
Bake at 350F for one hour and fifteen minutes or until done. (Note: Center of roll will be pink due to coloration from ham slices).
Cut three slices of mozzarella cheese diagonally and place them on top of the roll. Return to oven until cheese melts, approx 5 minutes Also delicious served cold or in sandwich breads.
