Reuben Casserole Recipe - Cooking Index
| 1 | Sauerkraut - undrained (16 oz) | |
| 12 oz | 340g | Corned beef - canned or sliced crumbled or -torn into small pieces |
| 2 cups | 292g / 10oz | Swiss cheese - shredded |
| 1/2 cup | 118ml | Mayonnaise |
| 1/4 cup | 59ml | Thousand island salad dressing |
| 2 | Fresh tomatoes - sliced | |
| 2 tablespoons | 30ml | Melted butter |
| 1/4 cup | 36g / 1.3oz | Pumpernickel or rye bread crumbs |
Place sauerkraut in 1 1/2 quart baking dish. Top with a layer of beef, then cheese. Combine mayonnaise and dressing; spread over cheese.
Top with tomato slices. Combine butter and bread crumbs in small bowl; sprinkle over tomato slices.
Microwave at 70% power for 12-14 minutes or bake at 350F for 45 minutes.
Let stand 5 minutes before serving. Yield 6-8 servings.
