Reuben Casserole

Recipe Ingredients

1   Sauerkraut - undrained (16 oz)
12 oz 340gCorned beef - canned or sliced crumbled or -torn into small pieces
2 cups 292g / 10ozSwiss cheese - shredded
1/2 cup 118mlMayonnaise
1/4 cup 59mlThousand island salad dressing
2   Fresh tomatoes - sliced
2 tablespoons 30mlMelted butter
1/4 cup 36g / 1.3ozPumpernickel or rye bread crumbs

Recipe Instructions

Place sauerkraut in 1 1/2 quart baking dish. Top with a layer of beef, then cheese. Combine mayonnaise and dressing; spread over cheese.

Top with tomato slices. Combine butter and bread crumbs in small bowl; sprinkle over tomato slices.

Microwave at 70% power for 12-14 minutes or bake at 350F for 45 minutes.

Let stand 5 minutes before serving. Yield 6-8 servings.
