Black and White Bean Salad Recipe - Cooking Index
2 cups | 125g / 4.4oz | Red onions - finely chopped |
2 tablespoons | 30ml | Olive or vegetable oil |
1/3 cup | 78ml | Red wind vinegar |
1/4 cup | 36g / 1.3oz | Chopped red pepper |
2 tablespoons | 30ml | Minced parsley |
20 | Garlic - minced | |
2 tablespoons | 30ml | NutraSweet spoonful (sugar) |
1/4 teaspoon | 1.3ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
1 cup | 237ml | -- ¥ |
15 | Great northern beans - rinsed and drained | |
1 cup | 237ml | -- ¥ |
15 | -- black beans, rinsed and drained |
Saute Onions in oil until crisp-tender in a medium skillet; Remove from heat and cool until warm. Stir in vinegar, red pepper, parsley, garlic, NutraSweet Spoonfull, salt and pepper.
In a serving bowl put the beans, (both types) and pour the onion mixture over them. Mix well and serve.
