Sausage With White Beans - (Butifarra Con Judias) Recipe - Cooking Index
This is a classic Catalan dish, often eaten as a light supper or a mid-morning snack.

Prick sausages with a needle so that they will not burst. Grill under broiler or over charcoal. Fry precooked beans in 3 tablespoons olive oil over fairly high heat until browned, turning them with a broad spatula to avoid bruising. It is essential to use olive oil, which imparts a special flavor and consistency to the beans. When the beans are fried, pour a thin stream of olive oil over them, arrange in a warmed serving platter, and serve with the sausage on top.
Note: Sausage and white beans can be prepared in another manner which gives them quite a different flavor: fry the sausage slowly in a skillet, then remove to brown the beans quickly in the sausage grease.
