Broiled Chicken Breasts With Seasoned Butters Recipe - Cooking Index
2 | Chicken breast halves - boned | |
Salt and black pepper to taste | ||
Green onion and cilantro butter - or | ||
Sun-dried tomato butter |
1. Preheat broiler. Season both sides of chicken with salt and pepper.
2. Spread a thin layer of seasoned butter (about 1/2 teaspoon) on chicken pieces. Place on broiler skin side up and broil until skin turns brown, about 4 minutes. Turn and broil second side. Continue broiling and turning until meat feels slightly firm to the touch and has turned from translucent to opaque. Remove from broiler.
3. Cut 1/2-inch-deep slashes across skin side of breast. Spoon additional seasoned butter (about 1 teaspoon) on each breast. Serve immediately.
