Chicken Salad Chinois

Recipe Ingredients

2 cups 125g / 4.4ozChicken; cooked - cut up
1/2 cup 73g / 2.6ozZucchini - chopped
1/2 cup 73g / 2.6ozRadishes - chopped
1/4 cup 59ml2% yogurt
1 tablespoon 15mlSoy sauce
1/2 teaspoon 2.5mlBulk granulated artificial - sweetener
1/2 teaspoon 2.5mlGinger - ground
3 cups 711mlLettuce - shredded

Recipe Instructions

In a bowl, combine chicken, zucchini, and radishes.

In a cup, combine yogurt, soy sauce, sweetener and ginger.

Pour over chicken mixture to coat evenly.

Refrigerate at least 2 hours before serving, then toss well gently.

Divide into 4 portions.
