1/2 cup | 118ml | Vegetable oil |
10 | Corn tortillas* | |
1 lb | 454g / 16oz | Ground beef |
2 | Anaheim chiles** | |
1/2 cup | 31g / 1.1oz | Onion, chopped - 1 medium |
1 | Pinto beans, drained | |
8 oz | 227g | Cheddar cheese, shredded |
Garnishes | ||
Dairy sour cream |
* Tortillas should be 6 to 7-inches in diameter and be cut into quarters
** Chiles should be seeded and finely chopped.
Prepare Guacamole, set aside.
Heat oil in 10-inch skillet until hot.
Cook tortilla strips in oil until light golden brown, about 1 minute, drain.
Cook and stir ground beef, chiles, and onion until beef is brown, drain.
Heat oven to 350F.
Arrange tortilla strips in bottom of greased rectangular baking dish 13 X 9 X 2-inches.
Top with beef mixture, red enchilada sauce, beans, and cheese.
Bake until hot and bubbly, 25 to 30 minutes.
Serve with Southwest Guacamole and Sour Cream.
