Tanaka Traditional Noodles

Recipe Ingredients

1   Eden udon - or- eden lotus root,
  Jinenjo - buckwheat or
  Mugwort soba
2 tablespoons 30mlEden toasted sesame oil - or- hot pepper sesam
1   Eden shiitake mushrooms - (soaked in...
1 cup 237ml- hot water for 20 minutes)
1 cup 62g / 2.2ozOnion - sliced (medium)
1 cup 110g / 3.9ozCarrot - cut into matchstick
2 cups 474mlChinese cabbage or bok choy - - or mustard greens,
  Finely chopped
3 tablespoons 45mlEden organic shoyu
2 tablespoons 30mlGrated fresh ginger
1/3 cup 30g / 1.1ozEden tamari almonds - sliced
  (optional)

Recipe Instructions

Prepare pasta. Rinse, drain and mix with 1 tablespoon toasted sesame oil. Set aside. Reserve shiitake soaking liquid, discard stems and slice shiitake mushrooms caps. Heat oil, saute onion, add carrots, shiitake and soaking liquid. Simmer 5 minutes. Mix in greens, add pasta, shoyu, ginger and almonds. Serve.
