Grilled Salmon w Roasted White Corn Salsa & Basil Cream Recipe - Cooking Index
4 tablespoons | 60ml | Olive oil |
2 teaspoons | 10ml | Grated lemon zest |
2 tablespoons | 30ml | Chopped fresh mint |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
6 | Salmon fillets or steaks - 1/2" thick | |
Roasted White Corn Salsa - see * Note | ||
Basil Cream - see * Note | ||
Garnish | ||
Cilantro or mint sprigs |
* Note: See the "Roasted White Corn Salsa" and "Basil Cream" recipes which are included in this collection.
Whisk olive oil, zest, mint, salt and pepper together and marinate salmon in mixture for 1 hour.
At serving time, grill salmon over hot coals until just done. Place on warm plates with a heaping tablespoon or two of Roasted White Corn Salsa on top, warm Basil Cream around and a garnish of herb sprigs. Serve immediately.
