Grilled Quesadillas Recipe - Cooking Index
4 | Flour tortillas | |
1 | Ca kidney beans - rinse, drain | |
1 cup | 237ml | Salsa |
4 | Green onions - chopped | |
1/4 cup | 36g / 1.3oz | Chopped green olives |
2 tablespoons | 30ml | Chopped fresh coriander |
1 1/3 cups | 315ml | Shredded old cheddar |
Arrange tortillas on work surface.
In bowl and using potato masher, mash beans with 1/2 c of the salsa. Divide bean mixture among tortillas, spreading evenly over each and leaving 1/2" border.
Sprinkle bean mixture with onions, then olives; sprinkle with coriander, then cheese.
Fold tortillas over and press gently.
Grill on greased grill over medium-high heat for 8-10 minutes or until browned and crisped, turning halfway through.
Garnish with remaining salsa.
