Rizi O Graten (Rice Au Gratin) Recipe - Cooking Index
3 1/2 cups | 829ml | Chicken or beef broth |
4 tablespoons | 60ml | Butter |
1 1/2 cups | 240g / 8.5oz | Raw rice |
Salt and pepper to taste | ||
1 1/2 cups | 219g / 7.7oz | Kefalotiri cheese - grated |

1 cup | 146g / 5.1oz | Ham - chopped |
3 tablespoons | 45ml | Bread crumbs - toasted |
Boil broth w/2 tbs of the butter. Add rice, stirring it so it doesn't stick. Add salt and pepper. Cover pot and simmer until liquid is absorbed (about15 min.). Add 2/3 of the cheese, mix well, then remove from heat. Half cool. Beat egg lightly and add to rice. Add ham and mix in well with a fork.
Butter a baking pan. Put rice in and spread evenly. Sprinkle with remaining cheese and then the bread crumbs. Melt the remaining butter and drizzle it over the top of the rice.
Bake in preheated 350F oven about15 minutes or until golden brown.
