1 lb | 454g / 16oz | Dried pinto beans |
6 cups | 1422ml | Water |
1/2 lb | 227g / 8oz | Salt pork - cut up |
1 lb | 454g / 16oz | Chuck steak - 1-inch cubed |
1 | Red chili pepper | |
1 | Onion - chopped (medium) | |
2 | Garlic - minced | |
1 | Tomato paste | |
1 1/2 tablespoons | 22ml | Chili powder |
1 teaspoon | 5ml | Cumin seeds |
1/2 teaspoon | 2.5ml | Marjoram |
Soak beans in water overnight. Brown salt pork in skillet; drain off fat in paper towels.
In slow-cooking pot, combine soaked beans (with water), browned pork and remaining ingredients.
Cover and cook 1 hour on high; reduce heat to low and cook an additional 8 to 9 hours.
