Recipe Ingredients

1 lb 454g / 16ozDried Italian linguine
16 oz 454gCanned Italian plum tomatoes with juice
1 tablespoon 15mlFinely-chopped garlic
  Dried red chili flakes - to taste
3 tablespoons 45mlChopped fresh basil leaves - plus
  Basil sprigs - for garnish
3 oz 85gExtra-virgin olive oil - plus oil
  To coat pasta
  Salt - to taste
  Freshly-ground black pepper - to taste
4 oz 113gParmigiano-reggiano - freshly grated

Recipe Instructions

Cook pasta until al dente, toss with olive oil, hold warm. Saute garlic and chili over low heat in olive oil then add tomatoes and tomato juice.

Mash tomatoes with spoon and cook until sauce consistency. Add basil then season with salt and pepper.

Toss pasta in sauce and portion into warm pasta bowls. Garnish with cheese and basil. Serve immediately.
