Chickpea, Bulgur And Tomato Pilaf

Recipe Ingredients

1 cup 237mlUncooked bulgur or cracked wheat
1   Chickpeas - (15 oz) - rinsed, drained
1 cup 62g / 2.2ozDiced plum tomatoes
1 cup 237mlSliced scallions - white and light
  Green parts
1/2 cup 20g / 0.7ozChopped flat-leaf parsley
1/4 cup 59mlFresh lemon juice
3 tablespoons 45mlExtra-virgin olive oil
1 1/2 teaspoons 7.5mlGrated lemon peel

Recipe Instructions

In large bowl, combine bulgur and 1 cup boiling water. Cover and let stand 30 minutes.

Fluff bulgur with fork. Add 1/2 teaspoon salt and remaining ingredients; stir well. Serve chilled or at room temperature.

This recipe yields 6 servings.
