Maple Bourbon Smoked Turkey Recipe - Cooking Index
A delicious centerpiece for Fall and Winter menu offerings, ideal for Thanksgiving and Christmas celebrations.

2 cups | 656g / 23oz | Maple syrup |
2 tablespoons | 30ml | Salt |
4 tablespoons | 60ml | Poultry seasoning |
1 tablespoon | 15ml | Freshly-ground black pepper |
1 cup | 237ml | Tabasco brand Pepper Sauce |
1 | Young turkey - (abt 12 lbs) | |
1 cup | 237ml | Hickory wood chips |
1 cup | 237ml | Water |
To make brine, combine water, bourbon, maple syrup, salt, seasoning, pepper and Tabasco brand Pepper Sauce. With brining needle, inject turkey with brine. Allow to marinate for 12 to 14 hours.
Place 1 cup water and wood chips in bottom of smoking pan. Place rack in bottom of pan. Cover rack with aluminum foil. Place turkey in pan and cover tightly.
Place pan on stove over medium-high heat for 8 minutes, then place pan in a 350 degree oven for 2 to 3 hours. Remove and check internal temperature. Finish uncovered until a 165 degree internal temperature is reached.
This recipe yields 1 turkey.
