1/2 cup | 118ml | Vegetable oil |
5 lbs | 2270g / 80oz | Regular-grind buffalo |
5 lbs | 2270g / 80oz | Course-grind buffalo |
6 cups | 1422ml | Water |
1/4 cup | 59ml | Chili powder |
4 tablespoons | 60ml | Cumin |
2 tablespoons | 30ml | Granulated garlic |
1/2 cup | 118ml | Tabasco brand Pepper Sauce |
3 tablespoons | 45ml | Salt |
16 oz | 454g | Refried beans |
Place onion and green pepper in a large brassier and saute in vegetable oil over medium-high heat until onions caramelize.
Place buffalo meat, water and all the seasonings, including the Tabasco brand Pepper Sauce, in the pan.
With a wire whip, breakup the meat until it is loose. Add the refried beans and bring to a simmer.
Braise the buffalo taco meat for about 2 to 3 hours over a low heat or until the meat is tender and the sauce has thickened.
