Buffalo Taco Meat

2 cups 292g / 10ozDiced green pepper
1/2 cup 118mlVegetable oil
5 lbs 2270g / 80ozRegular-grind buffalo

6 cups 1422mlWater
1/4 cup 59mlChili powder
4 tablespoons 60mlCumin
2 tablespoons 30mlGranulated garlic
1/2 cup 118mlTabasco brand Pepper Sauce
3 tablespoons 45mlSalt
16 oz 454gRefried beans

Recipe Instructions

Place onion and green pepper in a large brassier and saute in vegetable oil over medium-high heat until onions caramelize.

Place buffalo meat, water and all the seasonings, including the Tabasco brand Pepper Sauce, in the pan.

With a wire whip, breakup the meat until it is loose. Add the refried beans and bring to a simmer.

Braise the buffalo taco meat for about 2 to 3 hours over a low heat or until the meat is tender and the sauce has thickened.
