Buffalo Fajita Marinade

Recipe Ingredients

20 oz 568gLite soy sauce
15 oz 426gSoy Sauce
2 1/2 oz 71gChili powder
1 oz 28gNo-sodium Adolfs meat tenderizer
3 cups 187g / 6.6ozChopped onion
1 oz 28gMcCormick's fajita seasoning
3/4 cup 177mlTabasco brand Pepper Sauce
4   Limes
1/2   Bushel cilantro
10 lbs 4540g / 160ozGreat Range buffalo fajita steak - (SKU 10070)

Recipe Instructions

In a large food processor or blender, place the lite soy sauce, soy sauce, chili powder, Adolfs, chopped onion, fajita seasoning and Tabasco brand Pepper Sauce. Puree.

Trim and place meat into non-caustic container. Pour the marinade over the meat.

Cut the limes in quarters and squeeze into the container. Rough chop the cilantro and place in the container as well. Mix thoroughly. Over the next 72 hours, mix the meat.

Grill and serve with traditional garnish.

This recipe yields 40 portions.
