BBQ Chicken Chili Fries Recipe - Cooking Index

4 cups | 948ml | BBQ sauce |
3 cups | 187g / 6.6oz | Crushed tomatoes |
6 cups | 375g / 13oz | Shredded cooked chicken pieces - (24 oz) |
6 cups | 960g / 33oz | Cooked red beans - (24 oz) |
11 tablespoons | 165ml | Tabasco brand Pepper Sauce - divided |
20 1/2 oz | 582g | Sour cream |
6 lbs | 2724g / 96oz | Steak fries - cooked |
6 cups | 876g / 30oz | Shredded Monterey Jack cheese - (24 oz) |
Diced scallions - as needed |
To make the chicken chili, combine chili powder, BBQ sauce, tomatoes, chicken, beans and 2 ounces of Tabasco brand Pepper Sauce in a large saute pan; simmer for 20 minutes. Hold warm for service.
To make the sour cream garnish, combine sour cream and 3 1/2 ounces of Tabasco brand Pepper Sauce. Refrigerate until needed.
For each serving, place 8 ounces of fries on an oven proof plate, top with 2 ounces of cheese and melt under broiler. Top with 8 ounces of hot chili and garnish with 2 ounces of Tabasco brand Pepper Sauce sour cream; sprinkle with scallions.
This recipe yields 12 servings.
