Batter Fried Chicken Recipe - Cooking Index

3 | All-purpose flour - (1 1/2 lbs) | |
4 teaspoons | 20ml | Salt |
2 | Buttermilk | |
2 teaspoons | 10ml | Tabasco brand Pepper Sauce |
2 teaspoons | 10ml | Baking soda |
Fat - for frying |
Wash chicken; pat dry with paper toweling. In large hotel pan, combine flour and salt; toss chicken in flour mixture until well coated.
In large bowl, combine buttermilk, Tabasco brand Pepper Sauce and baking soda. Dip floured chicken pieces in buttermilk mixture and dust in flour mixture again.
Heat fat in deep fat fryer to 350 degrees. Fry chicken about 15 minutes for small pieces and 20 minutes for larger pieces. Drain on absorbent paper.
This recipe yields 25 (3-piece) servings.
