Recipe Ingredients

1   Spam Lite luncheon meat - (12 oz) - cubed
1 cup 62g / 2.2ozChopped onion
2/3 cup 73g / 2.6ozChopped celery
2   Garlic cloves - minced
1   Cajun style or regular stewed tomatoes - (14 1/2 oz)
1   Lower-sodium chicken broth - (10 3/4 oz)
1/2 teaspoon 2.5mlDried leaf thyme
6   Hot pepper sauce - (to 8 drops)
1 cup 160g / 5.6ozCarolina or River rice
2 tablespoons 30mlChopped parsley

Recipe Instructions

In lagre non-stick skillet or 3-quart non-stick saucepan, saute Spam, onion, green pepper, celery, and garlic until vegetables are tender. Add tomatoes, chicken broth, thyme, hot pepper sauce, and bay leaves. Bring to a boil; stir in Carolina or River rice. Cover. Reduce heat and simmer 20 minutes or until rice is tender. Discard bay leaves. Sprinkle with parsley.
