2/3 cup | 73g / 2.6oz | Chopped celery |
2 | Garlic cloves - minced | |
1 | Cajun style or regular stewed tomatoes - (14 1/2 oz) | |
1 | Lower-sodium chicken broth - (10 3/4 oz) | |
1/2 teaspoon | 2.5ml | Dried leaf thyme |
6 | Hot pepper sauce - (to 8 drops) | |
1 cup | 160g / 5.6oz | Carolina or River rice |
2 tablespoons | 30ml | Chopped parsley |
In lagre non-stick skillet or 3-quart non-stick saucepan, saute Spam, onion, green pepper, celery, and garlic until vegetables are tender. Add tomatoes, chicken broth, thyme, hot pepper sauce, and bay leaves. Bring to a boil; stir in Carolina or River rice. Cover. Reduce heat and simmer 20 minutes or until rice is tender. Discard bay leaves. Sprinkle with parsley.
