Creamy Spinach Enchiladas Recipe - Cooking Index

1/2 cup | 118ml | Milk |
1 | Chi-Chi's diced green chilies - (4.24 oz) - drained | |
2 cups | 292g / 10oz | Shredded Monterey Jack cheese - divided |
1 | Frozen chopped spinach - (10 oz) - thawed, drained | |
1 | Spam luncheon meat - (12 oz) - cubed | |
1/2 cup | 31g / 1.1oz | Sliced green onion |
8 | Flour tortillas - (7" dia) - softened |
Heat oven to 350 degrees. Combine sour cream, milk, green chilies, and 1 cup cheese. Combine spinach, Spam, and green onions. Add half of sour cream mixture to Spam mixture.
Divide Spam mixture evenly among tortillas. Roll up tortillas; place seam-side down in lightly greased 13- by 9-inch baking pan. Pour remaining sour cream mixture over tortillas.
Bake 25 minutes. Sprinkle with remaining 1 cup cheese. Bake 5 minutes longer.
