| 1 | Spam luncheon meat - (12 oz) - cut 1/2" cubes | |
| 1 | Bamboo shoots - (8 oz) - drained | |
| 1 | Cucumber - cut 1/2" chunks (small) | 
In wok or large skillet, cook oil over medium heat. Add carrot, green onion, and garlic; cook over medium heat, stirring occasionally, until crisp-tender about 4 to 5 minutes.
Add next 7 ingredients. Continue cooking, stirring constantly, until sauce is thickened about 5 to 6 minutes. Add Spam, bamboo shoots and cucumber. Cook over medium heat until heated through. If desired, serve over rice.
