Broccoli Souffle Recipe - Cooking Index

1 | Frozen chopped broccoli - (10 oz) - thawed | |
1 | Spam luncheon meat - (12 oz) - cut into chunks | |
1/4 teaspoon | 1.3ml | Salt |
1/4 teaspoon | 1.3ml | Cream of tartar |
Butter bottom of 1 1/2-quart souffle dish. Tie an aluminum foil collar of double thickness around dish, extending 2 inches above top.
In medium saucepan, saute onions in butter until transparent; blend in flour and pepper. Stir in milk; cook and stir over medium heat until mixture thickens and boils.
Beat egg yolks slightly; stir in a little of the hot mixture. Add yolks to saucepan with cheese; cook and stir over low heat until mixture thickens. Remove from heat.
Place broccoli and Spam in food processor; use chopping blade and process until finely chopped (or finely chop by hand); stir into sauce mixture. Beat egg whites with salt and cream of tartar until stiff but not dry. Fold gently into Spam mixture. Pile into prepared souffle dish.
Bake in 375 degree oven 35 to 40 minutes, or until top is lightly browned and souffle is set. Serve immediately.
This recipe yields ?? servings.
Nice to know: Sauce mixture may be completed ahead of time. Heat sauce and fold in the beaten egg whites just before serving.
