Vegetable Spam Stuffed Acorn Squash

Recipe Ingredients

  Vegetable cooking spray
3   Acorn squash - (abt 3 lbs)
1   Spam luncheon meat - (12 oz) - cubed
1/2 cup 73g / 2.6ozDiced red bell pepper
1/2 cup 73g / 2.6ozDiced jicama
1/2 cup 31g / 1.1ozFinely-chopped onion
2 cups 125g / 4.4ozTomatoes - peeled, diced fine (small)
1/2 teaspoon 2.5mlCoarsely-ground pepper
1/2 cup 118mlHouse Of Tsang ginger soy sauce
1/4 cup 15g / 0.5ozChopped green onion

Recipe Instructions

Heat oven to 400 degrees. Lightly coat 13- by 9-inch baking pan with cooking spray.

Cut squash in half lengthwise. Scoop out seeds. Place squash, cut sides down, in pan. Bake 40 minutes or until tender.

Meanwhile, in large skillet over medium-high heat, saute Spam 2 to 3 minutes or until lightly browned. Remove from skillet. Add bell pepper, jicama, onion, tomato, and pepper. Cook 5 minutes, stirring frequently. Add soy sauce. Bring to a boil. Return Spam to skillet. Heat thoroughly.

Fill each squash cavity with Spam mixture. Sprinkle with green onion.

This recipe yields 6 servings.
