1/4 cup | 59ml | Lemon juice |
3 tablespoons | 45ml | Minced onion |
1 tablespoon | 15ml | Olive oil |
1 teaspoon | 5ml | Dried leaf thyme |
1 | Garlic clove - minced | |
1/2 teaspoon | 2.5ml | Whole oregano leaves |
1/4 teaspoon | 1.3ml | Red pepper flakes |

1 | Pineapple chunks packed in light juice | |
1 | Spam Lite luncheon meat - (12 oz) - cut into 24 cubes | |
1 | Red bell pepper - cut into 1" pieces | |
4 cups | 640g / 22oz | Hot cooked rice |
Combine first 7 ingredients in a 9- by 12-inch dish. Wrap pea pods around pineapple chunks. Alternately thread Spam cubes, pineapple chunks and bell pepper pieces on 8 skewers. Place in dish with marinade. Cover and marinate 2 hours, turning occasionally.
Grill kabobs over medium-hot coals 10 minutes, turning occasionally. Or broil 5 inches from heat source 8 to 10 minutes, turning occasionally. Serve with hot cooked rice.
