1 | Spam luncheon meat - (12 oz) - cut in strips | |
2 | Carrots - thinly sliced | |
1 | Zucchini - thinly sliced | |
1/4 cup | 15g / 0.5oz | Finely-chopped onion |
1 | Garlic clove - minced | |
6 tablespoons | 90ml | Olive oil - divided |
1 | Linguini - (9 oz) - cooked | |
1/2 cup | 73g / 2.6oz | Grated Parmesan cheese |
2 tablespoons | 30ml | Lemon juice |
1/4 teaspoon | 1.3ml | Freshly-ground white pepper |
In a large skillet, cook Spam, carrots, zucchini, onion and garlic in 3 tablespoons of the olive oil until vegetables are crisp and tender.
Toss together the cooked linguini, vegetable mixture, parmesan cheese, remaining 3 tablespoons olive oil, and lemon juice until well coated. Serve immediately.
