6 oz | 170g | Lasagna noodles - cooked |
1 1/2 cups | 219g / 7.7oz | Diced mozzarella cheese - (6 oz) |
1 1/2 cups | 219g / 7.7oz | Freshly-grated Romano cheese |
1 1/2 cups | 219g / 7.7oz | Cottage or ricotta cheese - drained |
2 cups | 125g / 4.4oz | Diced Spam luncheon meat |
In a large skillet combine first 9 ingredients. Simmer, uncovered, until slightly thickened, 15 to 20 minutes. Remove bay leaf.
Preheat the oven to 350 degrees.
Spoon a third of the sauce into a 9- by 9- by 2-inch baking pan. Place 3 or 4 lasagna noodles over it. Combine 3 cheeses. Layer half the cheeses and the Spam on top the noodles. Spoon 1/3 more sauce over. Repeat noodle, cheese, Spam and sauce. Cover pan, leaving vent open.
Bake for 45 minutes. Uncover, let stand for 10 to 15 minutes before serving.
This recipe yields 6 to 8 servings.
