1 cup | 62g / 2.2oz | Chopped onion |
2/3 cup | 97g / 3.4oz | Chopped green bell pepper |
1/2 cup | 55g / 1.9oz | Chopped celery |
2 | Garlic cloves - minced | |
1 | Tomatoes - (14 1/2 oz) - cut up | |
1 | Lower sodium chicken broth - (10 3/4 oz) | |
1/2 teaspoon | 2.5ml | Dried leaf thyme |
8 | Hot pepper sauce - or to taste | |
1 | Bay leaf | |
1 cup | 160g / 5.6oz | Long-grain rice |
2 tablespoons | 30ml | Chopped parsley |
In large non-stick skillet or 3-quart non-stick saucepan, saute Spam, onion, green pepper, celery, and garlic until vegetables are tender.
Add tomatoes, chicken broth, thyme, hot pepper sauce, and bay leaf. Bring to a boil; stir in rice. Cover. Reduce heat and simmer 20 minutes or until rice is tender.
Discard bay leaf. Sprinkle with parlsley. Serve.
