| 1 1/2 cups | 219g / 7.7oz | Shredded Monterey Jack cheese - divided |
| 1 1/2 cups | 219g / 7.7oz | Shredded Cheddar cheese - divided |

| 1/2 cup | 31g / 1.1oz | Chopped onion |
| 1 cup | 237ml | Salsa - divided |
| 8 | Flour tortillas - (8" dia) | |
| Shredded lettuce | ||
| Chopped tomato |
Heat oven to 350 degrees.
In medium bowl, combine Spam, 1 cup Monterey Jack cheese, 1 cup Cheddar cheese, bell pepper, onion and 1/4 cup salsa. Spoon mixture down center of each tortilla; roll tightly. Place seam-side down in 13- by 9-inch baking dish. Top with remaining salsa and cheese.
Bake 20 minutes or until cheese is melted. Top with lettuce and tomato.
This recipe yields 4 servings.
