| 2 cups | 320g / 11oz | Cooked white rice |
| 1/2 cup | 8g / 0.3oz | Chopped fresh cilantro |
| 1 | Spam luncheon meat - (12 oz) | |
| 1 | Onion - chopped (large) | |
| 2 cups | 292g / 10oz | Shredded Monterey jack cheese |
| 1/2 cup | 118ml | Whipping cream |
| 1 tablespoon | 15ml | Vegetable oil |
| Warm tortillas |
In a medium bowl, combine rice and cilantro; set aside. In a large skillet over medium-high heat, cook Spam and onion 7 to 10 minutes or until lightly browned.
Meanwhile, in 2-quart saucepan over low heat, combine cheese, cream and oil. Cook, stirring occasionally, until cheese is melted. Place rice in center of plate; drizzle with cheese sauce. Place Spam mixture around the rice. Serve with warm tortillas.
