Asparagus Spamelt

Recipe Ingredients

2 tablespoons 30mlButter or margarine
1/4 cup 15g / 0.5ozFlour
2 cups 474mlMilk
3/4 cup 109g / 3.8ozShredded sharp cheddar cheese - divided
1/4 teaspoon 1.3mlSalt
1/4 teaspoon 1.3mlFreshly-ground white pepper
1 can  Spam luncheon meat - (12 oz) - cut into 12 slices
24   Asparagus spears - fresh or frozen
1/4 cup 59mlMild salsa
1/2 cup 99g / 3.5ozButtered bread crumbs

Recipe Instructions

Heat oven to 375 degrees. In saucepan, melt butter, stir in flour and cook until thick. Gradually stir in milk and cook until bubbly and thickened. Stir in 1/2 cup Cheddar cheese, salt and pepper. Remove from heat.

Spread the 2 3/4- by 3 1/2-inch slices of Spam in bottom of a 9- by 13-inch baking pan. Put Spam in oven for 5 minutes to soften for easier rolling.

Cook asparagus spears for 4 minutes. Cool slightly and place 3 spears on each Spam slice. Roll up. Fasten with a toothpick, if needed. Place in the pan. Cover with cheese sauce. Sprinkle with remaining 1/2 cup cheese. Sprinkle with crumbs. Bake uncovered for 20 minutes.
