2 cups | 474ml | Milk |

4 | Fresh halibut serving-size - (to 6) | |
1 cup | 146g / 5.1oz | Grated Swiss cheese or 1/2 cup |
Grated Parmesan cheese | ||

Place a piece of halibut in a buttered individual casserole (or place all pieces in one casserole). Set aside.
In a sauce pan, over medium heat, with a whisk melt the 4 tablespoons of butter. Add the diced onion and saute until onion is translucent. Add the flour and whish for one minute. Continue whisking while adding milk. Whisk until sauce is thick. Reduce heat to low and simmer for two minutes. Add salt and pepper and remove from heat.
Divide the sauce over the pieces of fish. Sprinkle with Swiss or Parmesan cheese, then sprinkle with paprika. Place in a 400 degree oven for 15 to 20 minutes until fish flakes and sauce is hot and bubbly.
This recipe yields 4 to 6 servings.
