Stuffed Mackerel Recipe - Cooking Index
4 | Mackerel - (abt 1 lb ea) - dressed, pan ready, | |
2 tablespoons | 30ml | Butter or margarine |
1 tablespoon | 15ml | Onion - chopped finely (medium) |
1 | Mushrooms - chopped | |
1 tablespoon | 15ml | Parsley flakes |
1 teaspoon | 5ml | Fennel seed - crushed |
1/2 cup | 73g / 2.6oz | Bread crumbs |
1/2 teaspoon | 2.5ml | Salt |
1 | Lemon - thinly sliced |
Melt butter or margarine in a skillet over medium heat. Saute onion, mushrooms, parsley and fennel seed in butter until onion is transparent. Stir in bread crumbs and salt to complete stuffing mixture.
Loosely place stuffing in the cavity of each mackerel and close with a toothpick. Place fish in a shallow baking pan and bake in an oven preheated to 350 degrees.
Bake for 15 to 20 minutes. Garnish with lemon slices and serve.
